Harvest by Roy Ellamar is the newest restaurant to open at the Bellagio Resort and Casino in Las Vegas. The restaurant provides the freshest, seasonal food inspired by local farms.

Some of the offering in the restaurant include Harris Ranch Hangar Steak, Farmer’s Salad, Fisherman’s Stew, Salt & Pepper Squid, and Cocoa Rubbed Lamb.

The restaurant has a full cocktail and beer menu with regionally sourced ingredients. Farmer’s Market cocktails like Beets by Roy is made from cold-pressed beet juice,  lemon juice, and El Silencio Espadín mezcal.

Located in Bellagio’s Spa Tower, Harvest by Roy Ellamar is open from 5 p.m. to 10 p.m. every evening.
